Recipe: Dijon Baked Salmon (GF)

I fully admit that, despite salmon’s many health benefits, it’s not been one of my favorite fishes. That being said, I do try to eat salmon because I know what a “superfood” it is. I try this recipe and that, in a desire to find MY salmon recipe…the one that’s easy to prepare, full of flavor, not too dry and not too strong/fishy.

I FINALLY found it!

This Dijon baked salmon is wonderful, with the bright flavors of lemon, Dijon mustard and fresh scallions. It’s lovely served over a bed of sautéed spinach or with some steamed broccoli.

Dijon Baked Salmon

2 Tbsp. extra virgin olive oil

2 salmon fillets (approx 5 ounces each or about 1 ½ inches wide)

2-3 tsp. Dijon mustard (I prefer Maille or Grey Poupon)

1 scallion, thinly sliced (white and green parts only)

2 lemon wedges, optional

 

Preheat oven to 450 degrees.

Divide the mustard between the 2 salmon fillets and spread evenly to coat. Heat olive oil in an oven safe sauté pan over medium high heat, until oil is shimmering. Place the salmon fillets in the pan, skin side down, and sauté for 2 minutes. Place the pan into the oven and bake for about 10 minutes, or until the fish is opaque in the center.

Set the oven to broil and broil the salmon for 3 minutes or so, until the top is lightly golden.

Remove from oven, sprinkle sliced scallions over top and serve with a squeeze of fresh lemon, if desired.

Serves 2.
