Girlfriends, have I got a sweet treat for you! This decadent chocolate pudding will absolutely knock you off your stilettos! It’s rich and creamy, with a hint of cinnamon and the best part is…it’s good for you! Yup.
No heavy cream, refined sugar or processed ingredients of any kind. It’s completely “clean” – pure cacao, coconut milk, raw honey, pure vanilla extract and the secret ingredient, which gives the pudding its smooth creaminess – avocado. I know what you’re thinking but don’t judge it until you’ve tasted it. Not only is the flavor incredible, but it looks gorgeous (definitely, “dinner party worthy”).
This one proves that dessert doesn’t have to derail your plans to eat clean and healthy.
I like to garnish with some coconut flakes, but orange zest or even a sprinkle of flaky sea salt look pretty, as well. However you dress it up, please snap a photo and Comment below or tag me on social media. I’d love to see your creations!
Buon Appetit, mes amies!
Healthy Chocolate Pudding
2 avocados, pitted and peeled
½ cup raw cacao powder (or unsweetened cocoa powder)
¼ cup coconut (or almond) milk (here’s my easy recipe for homemade almond milk)
6 tbsp. raw honey
1 tsp. vanilla extract
¼ tsp. ground cinnamon
Place all ingredients into either a food processor (fitted with a metal blade) or a high-speed blender (like VitaMix or Blendtec). Process until completely smooth, then divide among four dessert bowls. Chill, covered, in the refrigerator for at least 30 minutes before serving.
When ready to eat, pudding may be garnished with coconut flakes, fresh berries, whipped cream, mint leaves, orange zest or flaky sea salt (there’s definitely room to get creative here!)
